Egg stew is not only quick and easy to make but it is also very delicious. I personally love this with potatoes or fried plantains for breakfast or dinner when I'm a bit lazy to cook
Ingredients:
- 1 egg
- 2 tomatoes, diced
- 1 onion, sliced
- 2 garlic gloves, chopped
- 1 bouillon cube
- 1 tablespoon vegetable oil
- Salt and black pepper, to taste
Direction
Step 1: Heat the vegetable oil and add the onion, garlic, bouillon cube and black pepper. Stir fry until the onion is soft.
Step 2: Add the diced tomatoes with some drops of water. Cook on low heat for about 10 minutes
Step 3: Beat the egg and pour in the tomato sauce. Cook for 1 minute and stir the whole together.
Salt and pepper to your taste.
Serve with boiled potatoes and enjoy!!!!!!!!
