Recipe: Mpotompoto, Nutritious And Easy to Prepare

Mpotompoto or nyoma is a one-pot meal made mainly from yam or cocoyam cooked in broth. Although it is an ideal meal for everyone, it is also recommended for babies as a weaning food.

It is easy to prepare and very nutritious.
Ingredients:
A medium sized yam (Preferably cocoyam)
1 medium sized onion.
Tomatoes two medium sized tomatoes.
Dried herrings (preferably shrimps), and salted fish (Koobi)

Salt, palm oil and pepper.
Method:

  1. Peel and wash the yam.
  2. Wash onions and peel it.
  3. Wash tomatoes and pepper.
  4. Cut yams into small chunks and put in pot together with onion and tomato.
  5. Add water enough to cover the content and boil between 25 and 35 minutes.
  6. Wash and add salted fish (Koobi) to the pot.
  7. Cook till tender and remove tomatoes and onions and grind.
  8. Add the ground pepper and onion mixture to the yam on fire.
  9. Add the grounded herrings, pepper, redd oil and salt to taste.
  10. Put fire on low and cook for about 3 minutes while stirring.
  11. Food is ready.
