- 1kg Pork rind
- 1 Teaspoon Salt
- 1 Tablespoon Ground Cayenne Pepper
- Olive oil
Method
- Clean and scrape off any loose hairs on the pork skin.
- Dry skin with a kitchen paper
- Score the skin using a sharp knife.
- Sprinkle salt and cayenne pepper onto skin.
- Roast at Gas Mark 4 for 45-50mins in a roasting pan.
- Tap the skin to check for crackling sound.
- Allow to rest for 5 minutes.
- Cut up into bits and enjoy
